Overview

What it is
The INFERNO® ALTO 3in1 WOODFIRED OVEN is the most versatile woodfired oven built to handle the demands of commercial kitchens, game lodges, and hotels.
It combines the deep flavor profile of live-fire cooking with the speed, safety, and fuel economy of an enclosed, fully insulated unit.
Who it suits
It suits most restaurants, hotels and game lodges.
Why this size
The INFERNO ALTO features a side-opening door that provides chefs with direct, effortless access to the grids. As the tallest oven in the range, the ALTO operates at three distinct temperature zones simultaneously. This allows chefs to grill, roast, and slow-cook or bake all at once across up to five comfortably spaced grids.
Grilling (Direct Radiant Heat):
High heat from the glowing charcoal bed below sears meats, creating intense Maillard reaction crusts instantly without drying out the interior.
Roasting (Convection & Radiated Heat):
Heavy insulation and high-grade alloy walls trap surrounding heat, baking and roasting proteins or vegetables uniformly from all sides.
Smoking (Hot Smoking/Flavoring):
Controlled air dampers trap natural wood and charcoal smoke inside the sealed chamber, infusing intense wood-fired flavor into foods during high-speed cooks.

Key benefits

Why the Alto

Using a combination of charcoal and wood delivers the best balance of temperature stability and flavor control.

  • Charcoal (Base Heat):

Burn restaurant-grade lump charcoal or briquettes to build a reliable, long-lasting ember bed. Charcoal maintains the steady baseline heat required to hold temperatures near 250° - 350°C throughout service while keeping fuel consumption within the 4 to 6 kg daily average.

  • Wood (Flavor & Boost):

Add small logs or hardwood chunks (such as oak, hickory, or fruitwood) directly on top of the coals. Wood provides immediate high-heat spikes and releases the essential aromatic smoke needed for authentic roasting and smoking.

  • Maximum Output, Minimal Overhead

    • Cut Fuel Costs by Up to 90%: Drastically lower operating expenses compared to standard commercial gas grills.
    • 60% Faster Service Times: High thermal retention cooks orders significantly faster, keeping kitchen turnover high.
    • 30% More Fuel-Efficient: Fully insulated chamber uses up to 30% less solid fuel than competing charcoal ovens.
    • Rapid Payback: Full return on investment (ROI) within 8 months in standard commercial kitchen operations
  • The Inferno Alto 3-in-1 wood-fired oven operates across an overall chamber range of 100°C to 450°C (with a target cooking baseline around 250°C to 300°C), regulated via its built-in airflow regulation.
