Overview

Open fire, adjustable height

What it is
The Basque Parrilla is an open grill. The fire burns in the box below and the grid is raised or lowered over it, so the chef sets the heat by height rather than by waiting for the fire to change. It runs on charcoal or wood, and the whole of the cooking is in view.
Who it suits
Restaurants, hotels and event kitchens serving 100–120 diners a service, and any venue that wants live-fire cooking to be part of the room.

Key benefits

Why the Inferno Basque Parrilla

Designed for precision open-fire cooking, the Inferno Basque Parrilla combines traditional Basque culinary craftsmanship with modern kitchen economics.

  • Heat Set by Height

The grid moves smoothly over the fire, allowing the chef direct control over cooking intensity at the grill bars: lower and closer for high-heat searing, or raised higher to gently hold and finish.

  • Charcoal or Wood Fuel

Operates on restaurant-grade charcoal or wood, delivering consistent cooking temperatures between 250°C and 350°C.

  • Efficient to Run

    • Up to 60% energy savings compared to traditional gas grills.
    • 45% faster cook times than gas equivalents.
    • Return on Investment (ROI) in approximately 6 months in most commercial kitchen cases.
