Overview
Three heights, one fire.
- What It Is
- The Inferno Robata is an open floor-standing grill rooted in the Japanese robata-yaki tradition. Designed to cook over lump charcoal or solid wood, it functions as a multi-zone live-fire station for grilling, roasting, and smoking.
- Lower Rack: Sits directly above the coals, taking intense, high-heat exposure for fast searing and charring.
- Middle Rack: Moderates temperature to cook through proteins, roast vegetables, or render fat.
- Upper Rack: Utilizes gentle residual heat and rising embers to hold finished items, smoke slowly, or temper cuts prior to firing.
Key benefits
Why Choose the Inferno Robata?
The Inferno Robata combines visual theater, multi-zone temperature control, and commercial efficiency into a single centerpiece grill.
1. Three Simultaneous Heat Zones Over One Fire
- Multi-level grilling: Three rack heights positioned directly over a single fuel source provide immediate high, medium, and low heat zones.
- Streamlined line flow: Sear aggressively on the lowest rack while resting, holding, or finishing proteins and vegetables on the upper levels—no hot-spot swapping or waiting required.
2. Authentic Solid-Fuel Performance
- Fuel options: Restaurant-grade lumpwood charcoal, binchotan, or hardwood.
- Flavor profile: Delivers deep wood-fired char and smokiness.
3. Purpose-Built for the Open Kitchen
Floor-to-table theater: At 1,000 mm wide and 150 kg on heavy-duty castors, the live fire and tiered racks are completely visible to diners, making the grill an active visual focal point.

Detail
The racks
Three stepped tiers of mesh rack over the fire box, each further from the coals than the one below. The fire is built once; the heat a dish gets is decided by which rack it goes on.
